การศึกษาแบบภาคตัดขวางครั้งนี้มีวัตถุประสงค์เพื่อศึกษาพฤติกรรมการบริโภคอาหารปลอดภัยและปัจจัยที่มีผลต่อพฤติกรรมการบริโภคอาหารปลอดภัยของประชาชนในเขตอำเภอคำตากล้า จังหวัดสกลนคร โดยประยุกต์ใช้แบบจำลองสุขภาพเชิงนิเวศ กลุ่มตัวอย่างจำนวน 377 คน สุ่มตัวอย่างแบบแบ่งชั้นภูมิ เก็บรวบรวมข้อมูลด้วยแบบสอบถาม วิเคราะห์ข้อมูลพฤติกรรมการบริโภคอาหารปลอดภัยด้วยสถิติเชิงพรรณนา ได้แก่ ความถี่ ร้อยละ ค่าต่ำสุด ค่าสูงสุด ค่าเฉลี่ยส่วนเบี่ยงเบนมาตรฐาน ค่ามัธยฐานและพิสัยระหว่างควอไทล์ และวิเคราะห์ปัจจัยที่มีผลต่อพฤติกรรมการบริโภคอาหารปลอดภัยด้วยสถิติอนุมาน ได้แก่ สถิติไคสแควร์ และสัมประสิทธิ์สหสัมพันธ์สเปียร์แมน ผลการวิจัยพบว่า 1. กลุ่มตัวอย่างส่วนใหญ่เป็นเพศหญิง ร้อยละ 66.31 อายุระหว่าง 50 - 70 ปี ร้อยละ 57.03 สถานภาพสมรสร้อยละ 75.07 การศึกษาระดับมัธยมศึกษาร้อยละ 50.13 ส่วนใหญ่ประกอบอาชีพเกษตรกร ร้อยละ 71.35 มีรายได้ 6,000 บาทต่อเดือน ระยะเวลาอาศัยอยู่พื้นที่ 30-49 ปี ร้อยละ 45.89 2. กลุ่มตัวอย่างส่วนใหญ่มีพฤติกรรมการบริโภคอาหารปลอดภัยอยู่ในระดับสูง คิดเป็นร้อยละ 74.54 3. ปัจจัยที่มีผลต่อพฤติกรรมการบริโภคอาหารปลอดภัยของประชาชนในเขตอำเภอคำตากล้า จังหวัดสกลนคร ได้แก่ ปัจจัยระดับบุคคล คือ ประสบการณ์การอบรมอาหารปลอดภัย (p<0.01) และความรู้ในการบริโภคอาหารปลอดภัย (rs= 0.147, p<0.01) ปัจจัยระหว่างบุคคล คือ แรงสนับสนุนของสมาชิกในครอบครัว (rs= 0.603, p<0.001) และปัจจัยระดับองค์กร ได้แก่ การจัดทำสื่อประชาสัมพันธ์ (p<0.05) ผลการวิจัยครั้งนี้ สามารถนำไปใช้พัฒนานโยบายเพื่อส่งเสริมพฤติกรรมการบริโภคอาหารปลอดภัยให้มีประสิทธิภาพมากขึ้น
This cross-sectional study aimed to study the consumers’ food safety behavior and factors affecting the consumers’ food safety behavior of people in Kham Ta Kla District, Sakon Nakhon Province, according to an Ecological Model. The sample consisted of 377 people recruited through stratified random sampling. A questionnaire was used for data collection. Descriptive statistics, including frequency, percentage, minimum, maximum, mean, standard deviation, median, and interquartile range, were applied to analyze the consumers’ food safety behavior. Inferential statistics, including the Chi-square test and Spearman's rho, were used to analyze the factors affecting the consumers’ food safety behavior.
The results revealed that: 1. Most of the samples were female (66.31%), aged between 50 and 70 years (57.03%), 75.07% were married, 50.13% had secondary education, 71.35 % were farmers, had an income of 6,000 baht per month, and 45.89% had lived in the study area for 30 to 49 years. 2. Most of the samples had a high level of consumers’ food safety behavior, 74.54% 3. Factors affecting the consumers’ food safety behavior in Kham Ta Kla District, Sakon Nakhon Province were intrapersonal factors including training experience in food safety (p < 0.01) and knowledge of safe food consumption (rs = 0.147, p < 0.01), interpersonal factor including support from family members (rs = 0.603, p < 0.001), and organizational factor including the public relations (p < 0.05). These findings can be utilized to establish more effective policies to encourage consumers’ food safety behavior.
